Kopi Luwak is a gourmet coffee. It’s produced in different countries around the world. (Vietnam, Philippines, Thailand)
To produce this coffee, the raw coffee beans are eaten by Asian Palm Civets. That’s the reason why this coffee is of such a superb quality.

Travis asks: How did you find out about the coffee?

Lukas:

Well, I was in bali a few years ago visiting my brother.
I’ve always been a huge coffee lover my entire life, but on this day We were out in the country side on a motorcycle tour. We stopped at a organic, local cafe to refresh ourselves. There they had a few different local choices, but I noticed one coffee which was about 3 times as much as the other coffees.
So I asked… what in the world is this???
The local barista explained the intricate process to me in detail.
I responded by saying ”This sounds insane!! But I have to try it!”
So I did… and it was by far the single best cup of coffee I had in my entire life up to that point. After that very first cup, I was hooked for life.

So Travis, in this first episode we’re going to cover the 3 top questions that everyone has:

Why does it taste better?

There are 2 factors why the resulting coffee tastes better:

Civets eat only the ripest coffee cherries. (Sweet & delicious) – Ripest cherries contain the best coffee beans – fully ripe & as aromatic as it gets.
Proteolytic enzymes break down the protein in the coffee beans. Protein contains most of the coffees bitterness, which is therefore removed. – Resulting in a smooth, balanced coffee with rich and aromatic flavor.

The first reason is that the civets only eat the ripest coffee cherries. They eat them because they taste sweet and delicious. In the ripest cherries there are the best coffee beans – those beans are fully ripe, therefore as aromatic as it gets.
Reason number two is that proectolytic break down the protein in the coffee. This protein contains most of the coffees bitterness, which is therefore removed. The result is a smooth, balanced coffee, which is rich and aromatic in flavor.
